Thai Peanut Butter Puff Cookies

We've spiced up the traditional Peanut Butter Cookie a few exotic spices to create a dynamic Thai Peanut Butter Puff Cookie! This vegan beauty blends fresh bananas and coconut oil for taste and softness, turmeric for a robust sensory experience, and calming vanilla extract to soothe the mind.

BONUS! Pair it with your favorite ice cream or dip it in white chocolate to take it to another level.



  • 1 cup brown sugar
  • 3/4 cup peanut butter
  • 1/2 cup coconut oil
  • 1/ tsp vanilla extract
  • 1/4 cup banana puree
  • 1/2 cup of flour
  • 1 tsp baking soda
  • 1/3 cup coconut flakes
  • 1/2 tsp turmeric powder
  • 1 tsp cinnamon powder


1) Preheat oven to 350 degrees

2) Combine all ingredients using a hand blender or electric mixer and blend until all components have mixed evenly. Be sure to scrape the sides

3) Line baking pan with aluminum foil

4) Hand roll one large tablespoon of batter and place on aluminum foil, keeping dough balls 2 - 3 inches apart 


5) Bake for 9 - 12 minutes or until desired consistency is reached. For a softer cookie, only bake for 7 - 8 minutes

6) Let cool (or enjoy warm with vanilla ice cream)
